    Ma’moul is a butter cookie made with semolina flour that’s molded and filled with dates, pistachio or walnut. These cookis can last for 2-3 weeks room temperature, and longer if kept in the fridge.

    This brioche-like bread, is sweet pillowy layers of carby goodness, a simple syrup coat topped with sesame and black seeds. One of the main ingredients is special spice called Mahlab, it is a small, wild cherry pit that is ground into a meal-like substance. Ma’rook is  commonly served during the month of Ramadan.

My story

About Festok

Based in Boston, MA and out the heart and soul of Rouba Bahhady, Festok Bakery was born as a simple idea that evolved into an aspiring reality encouraged by the droves of applauding tasters and influenced by her love for her Syrian heritage, the sweet memories of growing up in the old city of Aleppo and the beautiful aromas of the bakeries of home. Rouba spent her days watching her mother cook, bake, and create a plethora of dishes using fresh herbs, silk road spices and local authentic ingredients. After moving to the US, Rouba embarked on a self-learning journey of cooking guided by her family and friends discerning palate, the courage of experimentation and passion for cooking. In her words, “baking is the taste and smell of childhood; it is nostalgia, and it is love.”

Much like the vibrant pink-yellow color visible on the outer layer of a fresh pistachio, Rouba inspires those around her with her ambitious and colorful personality. Discovering new flavors and combinations as well as giving others a taste of her heritage is what, in her words, gives her, “happiness, satisfaction, and peace.” Ultimately, her days spent in one of the world’s most distinguished homes of vibrant cuisine and pistachio production is what truly propelled the establishment of Festok Bakerynamed after the Arabic word for Aleppo’s Pistachio: Festok Halabi.

Our Mission

 The goal of Festok bakery lies in the heart of the creator: to honor traditional recipes of her childhood whilst simultaneously adding her own dash of creativity, and spreading the joy of her passion to others.
